Yacon Salad Dressing

Yacon Salad Dressing
This zesty salad dressing recipe uses 100% pure yacon syrup to add a little touch of sweetness to your greens without piling on the sugar and calories.

  • 3 tsp  Genesis Today Yacon Syrup
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp organic apple cider vinegar (or 1-2 tsp balsamic vinegar)
  • 2 tbsp plain or spicy mustard
  • ¼ cup water
  • Italian seasonings (basil, oregano, thyme)
  • ½ tsp of minced garlic
  • A hearty pinch of salt

Shake well before using and serve over dark, leafy salad greens.


Healthy Molasses Cookies

Do you love molasses cookies but want to avoid the fat and calories? Try taking this traditional favorite and adding a healthy twist of yacon syrup to get a boost of natural sweetness without the extra calories.


  • 3 cups oat flour (3¼ cups oats ground in a food processor)
  • ½ tsp baking soda
  • 2 tsp cinnamon
  • 2 tspt ginger
  • ½ tsp sea salt
  • ½ cup Genesis Today Yacon Syrup
  • ½ cup unsweetened apple sauce


  • Preheat oven to 350°F. Line two baking sheets with parchment paper.
  • In a large bowl, combine dry ingredients (first five ingredients listed).
  • In another bowl, mix the yacon syrup and applesauce together.
  • Slowly stir the wet ingredients into the dry ingredients and mix until blended.
  • Drop large rounded tablespoons onto cookie sheet. Dip spoon into a warm glass of water if dough sticks to spoon. Gently press each cookie.
  • Bake for about 8-10 minutes or until golden brown. Let cool for a couple of minutes.

Applesauce Pancakes with Yacon Syrup

These simple applesauce pancakes feature a superfood allstar —100% yacon syrup. Loaded with natural prebiotics and probiotics, yacon syrup offers a natural sweetness without a lot of extra sugar and calories.


  • ½ cup Genesis Today Yacon Syrup
  • 1 cup milk, at room temperature
  • 1 tbsp lemon juice
  • 1 cup oat flour (1¼ cups oats ground in a food processor)
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 2 tbsp wheat germ or ground flaxseed
  • ¼ cup unsweetened apple sauce
  • 2 tbsp coconut oil
  • 1 egg
  • Cooking spray
  • Fresh berries for topping (optional)


  • In a small bowl, add lemon juice to milk and let stand for about ten minutes (this is homemade buttermilk!)
  • In a large bowl, combine oat flour, baking soda, salt and wheat germ or flaxseed.
  • In another bowl, cream the applesauce, coconut oil and egg together. Gently stir wet ingredients into dry ingredients.
  • Heat a large pan or griddle over medium heat. Spray with cooking spray and add pancake mixture immediately. Cook each side for about 2-3 minutes or until golden brown.
  • Serve with yacon syrup and top with fresh berries.

Immunity Boosting Blast

This smoothie has a powerful blend of Vitamin C & E, probiotics, anti-viral and anti-bacterial ingredients!

• 1/2 cup plain Greek yogurt
• 1/2 cup unsweetened almond milk
• 1-2 small navel oranges, peeled and pulled apart into wedges
• 1 kiwi, peeled
• 1 cup raw spinach or kale
• 1 ounce Sea Buckthorn100
• 1 ounce Mangosteen100
• 1 Tbsp. raw honey
• 1 Tsp. cayenne
• A few ice cubes
• Water as desired

1. Place all ingredients in a high-powered blender.
2. Add enough water to reach desired consistency.
3. Blend for 30-45 seconds, pour in a glass and enjoy!
