The women of the Konso tribe in Ethiopia prepared “dama,” the main dish of the Konso, for the evening meal after working in the fields during the day. Dama is prepared using a mixture of grains and maize, depending on what was available on any given day. While the dama is prepared, moringa leaves are submerged into an okkota (or cooking pot) filled with boiling water, often collected rainwater. Salt is sometimes added to help cook the moringa leaves. Once the moringa leaves and dama are ready, the dama is poured onto a wooden platter and covered in cooked moringa leaves, much like spinach. The family gathers to eat the meal to replace their energy from the day’s work and prepare for the next day.

The leaves of the moringa have been used traditionally as a food source due to their nutrient profile and ability to grow in dry regions. The leaves can be used in salads or as fresh greens. The pods inside the moringa leaves have been used to make teas or eaten raw, boiled or even fried.

More than 500 years ago, the Konso women also used the moringa for purification of water and thought it supported healthy inflammatory responses, headache relief and eye health.  It was a mainstay of their meals and thought to be the reason among the tribe for their health.*
